How do I decide which files to save?

I have disabled windows update, have to do it every time I do run an update as it sneakily changes my system settings back again. Having had to re=install my machines 4 times after failed updates I want to know before it starts just what has been said about it, usually bad failures, sorry guys but at 68 I can't afford to waste my life correcting MS errors.
